Most rice available at Japanese stores is called hakumai: this can be literally translated as “white rice”, and the reason for its color is that its outer surface is polished to make it easier to eat and cook. Have you ever tried genmai, which is also known as brown rice or unpolished rice?

Genmai Japanese brown rice is popular among health-conscious consumers because of its rich nutrition, but it is also notorious for its toughness, its poor taste, and difficulty to cook (it is highly waterproof, so you have to soak it far longer than hakumai polished rice).
