Amazake is a fermented rice drink made from sake kasu (sake lees) and kome koji (malted rice, or rice koji). It’s a sweet, rich drink with a flavor slightly reminiscent of Japanese nihonshu. Its texture is normally creamy, thick, and chunky, thanks to the grains of rice that remain inside. It’s a hearty beverage that’s great to drink all year round.
